Ah, obviously you'd need to adapt the hunting technique, so as to trap the elk's hind legs, get it up in the air and vut its throat, in the proper fashion, but that is a mere implementation detail (and probably requires huge clanking brass balls).
Deer is intrinsically kosher, so my error, but I sincerely doubt that deer are ritually slaughtered in the correct manner, or that you would find a competent schochet to schecht deer.
