Song actually about herring roe collection, but this is probably similar. On the other hand, cod are a lot bigger than herring, so it's possible that instead, they simply cut open the cod and remove the relevant organ as part of the process of butchering the rest of the fish.

the fact that it's called shirako ("white children") in Japanese fills me with such revulsion. One of those things where Japanese poetic allusion makes something even worse than it is. (see also "dancing" shrimp)
